Tales from my Travels: It was with somewhat of a heavy heart that I left the white beaches, fine dining and comfortingly European-like city of St. Augustine. My dad had written to some of his university friends the night before; one of his professors had answered almost instantly, suggesting getting together for lunch. So we set off for Gainesville in the late morning. The restaurant his professor had chosen was Paramount Grill, now celebrating its fifteenth anniversary. They pride themselves in their use of fresh ingredients and the fact that everything is homemade. They also have a great selection of beer and wine. The chef constantly changes the menu but it is updated on the website. They serve lunch and dinner and also offer brunch on the weekends. Shortly after we had ordered our food, our waitress brought us a basket of deliciously warm berry corn muffins with a honey butter spread. I at first thought the muffins would be sweet but they were not; the honey butter does, however, add just the right amount of sweetness to them. Finally, our food was brought out. I ordered the “Artisan greens with assorted berries, asparagus, haricots verts, granny smith apple, gorgonzola, pecans and red wine-berry vinaigrette.” It was superb with just the right blend of flavors. This restaurant earns points for great food presentation and great service. The waitresses were not at all overbearing, leaving us to chat amongst ourselves and enjoy our food peacefully. It offers several great vegetarian options. It is a bit on the more expensive side, not too much though.
